Potassium phosphate is a generic term for the salts of potassium and phosphate ions including monopotassium phosphate (KH2PO4), dipotassium phosphate (K2HPO4) and tripotassium phosphate (K3PO4). As food additives, potassium phosphates have the E number 340. [1]
Potassium phosphate is an acidity regulator and chelating agent (used to bind metal ions). It prevents desiccation and is used as an acid stabiliser in powders as well as to prevent formation of clumps. It increases the activity of antioxidants. [1]
It is approved to use as food additive in EU and generally recognized as safe food substance in US.
