Monosodium Glutamate (MSG) (E621), the sodium salt of glutamic acid, which can be naturally found in tomatoes, cheese and other foods. It is used in the food industry as a flavour enhancer with an umami taste that intensifies the meaty, savory flavor of food, as naturally occurring glutamate does in foods such as stews and meat soups. In Japan, it is commonly used as soup base. [1]
It is approved to use as food additive in EU and generally recognized as safe food substance in US.
