Calcium sorbate is the calcium salt of sorbic acid. It is used as an antifungal and antibacterial synthetic preservative in food products (E203). It can be found in candied peel, cheese, cider, concentrated fruit juice, dessert sauces, dried apricots, fillings and toppings, fermented milks, frozen pizzas, fruit salads, gelatin capsules, margarine, processed cheese spreads and slices, soft drinks, soup concentrates, sweets and yoghurt.
In EU, it is deleted from the Union list of authorised food additives since due to the absence of appropriate genotoxicity data its inclusion in the list can no longer be justified. [2] In US, calcium sorbate is generally recognised as safe food substances under FDA Food Additives Status List.
