Functions:
1. Binder / Stabilizer - Retains the physical characteristics of food/cosmetics and ensure the mixture remains in an even state.
2. Gelling Agent / Thickener - Increases the viscosity by thickening the liquid to give it more texture
Distarch phosphate is a modified starch. These are not absorbed intact by the gut, but are significantly hydrolysed by intestinal enzymes and then fermented by intestinal microbiota.
It is approved to use as food additive (E1412) in EU.
