Functions:
1. Colorant - Pigments or dyes that are added in order to change or enhance the color.
Azorubine is an azo dye produced as a disodium salt. In its dry form, the product appears red to maroon. It is mainly used as food additive (E122) which are heat-treated after fermentation. In the EU, azorubine is authorized for use in certain foods and beverages, such as cheeses, dried fruit, and some alcoholic beverages and is permitted for use as an excipient in medications.
