Bromelain is an enzyme extract derived from the stems of pineapples, although it exists in all parts of the fresh pineapple. It is a white to tan powder and soluble in water.
The extract has a history of folk medicine use. It can be used for pain, muscle soreness, and many other conditions, but there is no good scientific evidence to support these uses. As an ingredient, it is used in cosmetics, as a topical medication, and as a meat tenderizer.
It has an unapproved E-number (E1101iii).
